This Week's Local & In-Season Recipe 


Eggs Benedict With Wilted Spring Greens
Classic recipe with a fresh and local twist! Enjoy some mineral-rich greens with your eggs for a tasty and healthful breakfast. 

Ingredients:

  • 6 large eggs (available at market!)
  • 1 clove garlic, minced
  • 1 tablespoon butter (available at market!)
  • 3 English muffins, halved and toasted (homebaked breads available at market!)
  • 6 pieces ham, sliced thin (available at market!)
  • 12 ounces mixed spring greens (available at market!)

Instructions

  • Poach the eggs, taking care to keep yolks intact. Set aside.
  • Melt with butter and saute garlic until just fragrant. Stir the greens into butter and garlic until just wilted.
  • Place a piece of ham on each toasted muffin half. Distribute the greens over each. Work quickly to keep the food warm. Top with an egg and hollandaise sauce.
  • Enjoy!
