The start of Daylight Savings Time is one of my favorite holidays of the year. (Yes, I know it was weeks ago, and I know not everyone considers it a holidaybut the gift of longer days (at least in perception) is one I don’t take lightly.)

Hawaii and Arizona (and American Samoa, Guam, Puerto Rico, and the Virgin Islands), I guess you don’t have that sharp end-of-day pain when the clocks move backward in the fall, but you do miss out on the pleasure of springing forward.

And finishing dinner while it is still light out? Oh my goodness, what a treat!

This was easy, pretty, and my kids liked it—trifecta. Serve it up with Roasted Asparagus with Creamy Mustard-Oregano Sauce.

These are some of my family’s favorite burgers (and no one even notices that they aren’t beef). Serve a quick, colorful Spinach and Radish Salad with Feta on the side.

Hey, you reading-through-to-Friday friend! You deserve a little celebration, which this week will come in the form of Steak Fajitas with Roasted Tomato Sauce. The sautéed peppers and onions could be all the vegetables you need, but you could also add a side of Southwest Black Bean and Corn Salad. If you’re turning this into a real party, you could do worse than to kick it off with some Queso Fundido with Chorizo.
