Meal-Plan Problems Solved!

Wow, there’s a lot we can’t control in the world, huh? So, these are the moments where hunkering down with the things we can control seem pretty appealing. And dinner is (most of the time . . . some of the time?) something we can control. 
 
I’m leaning heavily into comfort food right now, but I have also realized over the years that comfort food is not necessarily the foods you grew up with, or that are from the same country as you are. A Mediterranean lentil salad feels like comfort food to me. So do udon noodles with a creamy peanutty sauce. So do quesadillas. So does anything with Parmesan. And yes, so does pizza, for sure, whether it’s a New York slice, or something a little more sophisticated that I get to have at a restaurant, or make in my own home.
 
If I had to pick a theme through my cooking, I might say that it’s a wide assortment of comfort food dishes. Super elastic. Super evolving. Super inclusive. I might also say other things, which I have to think about. But for now, have a terrific week, enjoy the calm before the storm (when I and every other food writer person will be pelting you with brussel sprouts and butternut squash recipes for the foreseeable future), and continue to enjoy the final moments where you wonder if it’s still reasonable to wander out without a coat.
 

Interested in pursuing some meatless Monday options? Not a bad idea, right? This salad is satiating and vegetarian and cheap and also has avocado, which is an attribute worth noting. This dish is complete on its own, but I can't help myself from pairing everything with a green salad, and I think even though the cuisines seem mismatched, the Spicy Greens Salad with Gochujang Dressing will work as a side salad. Who likes being too matchy matchy, anyway.

A delicious and easy 15-minute meal you can throw together with pantry ingredients and any vegetables you like. Creamy and super satisfying. I tend to forget about peanut noodles for a while, and rediscovering them is a huge treat. Oh, gosh, also vegetarian. Look at that.

A small handful of ingredients turns inexpensive pork loins into a terrifically flavorful main course. Serve with The Best Parmesan Roasted Potatoes (when roasted potatoes meet nutty Parmesan, only good things can happen) and Millet and Greens Salad. In the immortal words of David Bowie, wham, bam, thank you ma’am.

If you have kids, there is only one dinner goal on this night: to get something nutritious into their stomachs before the sugar fest to beat all sugar fests begins. Quesadillas have been my go-to meal on this night for as long as I can remember—they can be served at room temp, they are finger food (because a sit-down dinner with utensils is rarely in the cards) and they are fast and easy. I think Perfect Simple Roasted Cauliflower would be good on the side, and I won’t even be annoyed if everyone just eats it with their fingers off the sheet tray.

Is this not a pretty little combination of words? (Cheese; yes! Pizza; yes! Caramelized onions; yes! yes!) I will also tell you that it makes wonderful leftovers—a terrific cold pizza breakfast or snack the next day. Serve it with (you know it)  a green salad.
