Do you have mixed feelings about back-to-school time? I do. I’m willing to bet you have the same kinds of mixed feelings. That delicate balance between being ready for the kids to get back into their routines, juxtaposed against that crazy-making “where did the summer go?” wave of emotions...yeah, we’re all feeling it.
And in its own category, its own corner of the ring, the back-to-school dinner conundrum raises its head like the sleeping walrus that it is.  

What makes a perfect back-to-school dinner?

  • Make Ahead-ability (I made up that word, as you can see)
Here are 5 recipes that fit the bill:
1. Grilled Chicken Breasts with Lime, Roasted Garlic and Fresh Herb Marinade: These moist chicken breasts need only a handful of hours to be transformed by a super simple marinade.
2. Simplest Tomato, Corn, Basil and Mozzarella Pasta Salad: Could not be easier, or more delicious, and if this isn't end-of-summer eating at its finest I don't know what is.
3. Chicken and Mushroom Marsala Rotelle: This is the definition of stick-to-your-ribs hearty, and weeknight friendly. 
4. Slow Cooker Barbecue Pulled Pork: You really have to love that slow cooker, you really do (no, the speed thing doesn’t apply, but it’s replaced by the miracle of hands-off cooking).
5. Dijon and Honey Crusted Pork Tenderloins: There are few cuts of meat that give you a more satisfying bang for your buck than a fast, easy-to-roast pork tenderloin.
