Six Last Hurrah of Cold Weather Dishes!

Last month, I wrote a slightly cranky newsletter harping on the fact that winter was taking its sweet time to get out of Dodge.  I guess winter doesn't subscribe to The Mom 100 Cooks newsletter. This winter is like that guest at a party who doesn't notice that the hosts are yawning and vacuuming, and asks for one more glass of wine.

But being persistently crabby never got anyone anywhere.  And you know what?  The truth is, as winter makes its (slow, plodding) way out, I do start to get a little pre-nostalgic (is that a word? It is now) about what I’ll miss cooking as the weather warms up, things I want to give one more go. And then...Don't let the door hit you on the way out, winter.

Here are six of them:

1. Roasted Butternut Squash: You, perfect, simple side dish, you.

2. Macaroni and Cheese: If this doesn't happen at least one more time before the weather warms up, I will hear about it.

3. Red and Yellow Beets and Sautéed Beet Greens: Those root vegetables, they do get us through some pretty tough times. This was one of my favorite simple root vegetable dishes of this winter.

4. Hearty Lentil, Vegetable and Grain Soup: One more pot of this...

5. Roast Beef with Mustard Garlic Crust and Horseradish: And a final roast.

6. Mashed Potatoes: Plus these to go with it...maybe the horseradish version.
