End of January Meal Plan

It’s like because 2020 was the wildest year, January 2021 decided to be competitive with the entire preceding year and be all, “Oh, I see your outrageous, and I’ll raise you an outrageous.” Listen, February: just relax. This does not need to be an ongoing game of “you thought LAST month was nuts.” Just be the bigger month, and let January win.

I’m feeling a bit, um, puffy? All of these cold months and stressful days have led me to justify melting a whole lot of cheese and boiling up a whole lot of pasta. In fact, I just skipped right over those New Year’s resolutions to cut back and reclaim my jeans. This is no time for resolutions, man, this is war. 
But it turns out you can only fight a pandemic with lasagna so much. I hope you’ll forgive me if you have been being virtuous and were more in the mood for cozy indulgence this week. I’m trying to reign it in, at least for the moment. Which doesn’t mean a head of celery and some rice vinegar, no ma’am. Though the times may be ridiculous; I’m not (but I would be hesitant to take a vote on that in my house).

Here are some things I will look forward to eating this week without any

Healthy and satisfying, plus a serious dose of good-lookingness (which is now officially a word).

Tarragon is an assertive and lively herb, one that seems to get overlooked. Fresh tarragon can add a mild licorice-y flavor that perks up an already perky vinaigrette; the perfect foil to rich salmon.

Gorgeous and super healthy, thanks to more than three cups of diced vegetables built right in. Just because I’m trying to pull it together doesn’t mean we can’t have comfort food.

Simple and healthy, but pretty and elegant as well. This was one of the meals I made when I was absorbed in Downton Abbey, and now maybe we will have it while watching Bridgerton. Though for Bridgerton it feels like it might need some wonky garnish, like a chandelier made of Parmesan.
