Meal Plan Problems Solved!

At this time of year, things in my  house start to pick up pace-wise. Lacrosse season is now in full swing, so there are practices that stretch toward 7:00 p.m., and games that might go even later. Gary and I have an uptick in business travel here and there. We’re trying to get everyone’s summer plans wrestled into place (and I do not use the word wrestled lightly).

(And a certain son is, um, you know, graduating from high school in a couple of months.)

BUT NOTHING TO LOOK AT HERE, LET’S KEEP MOVING, NO ONE IS GROWING UP AND LEAVING THE NEST, EVERYTHING IS JUST FINE AND THE WAY IT ALWAYS HAS BEEN, AND FOR GOD’S SAKE WILL SOMEONE TAKE OUT THE TRASH, AND WHO MENTIONED COLLEGE, ANYWAY?

Where was I? Oh yes, it’s busy around here, and so getting a handle on the week’s meals is all the more helpful. Her are my intentions for this week at our table:
Is it time to wheel out the grill where you live? If you are even considering it, then the answer is yes. It’s time. Add a starch, and this is a sweet little spring dinner. The simple arugula basil dipping sauce that accompanies these potatoes would also be delicious with the chicken and artichokes.

I have been waiting for the moment when a salad as a main course starts to seem not only reasonable, not only desirable, but downright smart. Adding avocado and chunks of flaky cooked salmon to a salad always feels like the height of luxury to me. The salmon can be cooked the day before, making this super fast to pull together.

Are you in the mood to be loved a little bit more than I imagine you already are? If so, you will make these Buffalo Turkey Burger Sliders with blue cheese sauce and everyone in your house will gaze upon you adoringly. Oven-baked sweet potato fries may intensify the affection. I can’t tell you how long this will lastin my house it dissipates once I point out the sink full of dishes.

Vietnamese shrimp salad is bright and vibrant and freaking gorgeous. I make this kind of dish and pray for leftovers.

Now what would be a nice reward for all of us who make it to the end of the week still on our feet . . . Marinated petit filet? Why yes, that would be just the ticket. And with that a side of Fennel and Endive Salad and perhaps some cute little smashed potatoes. And a big old bottle of wine.

BUT WAIT, THERE'S MORE . . .
