Early February Meal Plan

Every month of the pandemic brings new challenges and new quirks, doesn’t it? Lately I’ve noticed that the question “What’s new?” lands like an 8-grain pancake on a plate, heavy and flat. Every once in a while someone has something cool to share—a new job, a baby born—but by and large the answer is “Um, not much.” We know life has slowed down when bunion surgery is big news.
And yet. And yet. Sparks of optimism are flickering—the vaccines are happening, the days are staying lighter longer, and every day there is some news from the White House that speaks of progress being made. I not only allow myself to enjoy these bright spots, but also make myself reflect on them. It’s too easy to allow the negativity to inject itself into our lives right now. What do you do to keep positive? Write in a gratitude journal? Watch TikTok dances? (Those stair dances kill me—I would be in a cast if I tried one.) Practice Tae Kwon Do? I meditate, take long walks with friends, and look into my sweet pup’s eyes, where there is nothing but love. They don’t change the reality, but these things help.
Guess what else helps? Oh, you know what I’m going to say . . . COOKING! Cooking helps! Even though I write recipes for a living, I’m most in the cooking-groove when I am just improvising with whatever I have on hand. Today I made a chicken enchilada casserole by tossing some cooked shredded chicken with some sautéed fennel, garlic and onions, black beans, and a can of enchilada sauce. I layered the mixture with some warm corn tortillas, handfuls of a Mexican cheese blend, and more enchilada sauce. I listened to 70's rock ("Brandy, You’re a Fine Girl") while I made it. Later, I’ll bake it and serve with a salad for dinner.
