Mid-March Meal Plan

So, how goes things? I was in the elevator of my apartment the other day (already with another person, the COVID elevator limit), and the door opened and a neighbor friend was standing there. We said hello, and she simply looked at me and said, “I am so completely over this.” I just nodded vigorously as the door slid shut.
 
But then I walked outside (OK, I hobbled outside with my omnipresent orthopedic boot and my cane) and the air felt . . . different. Promising. As my friend Kate (who, BTW, is responsible for making sure this professional-looking newsletter goes out every week; thank you, Kate!) said, “The air feels rounder, less sharp.” Damn. So well said.
 
Rounder, a bit softer, and at moments when the sun is shining, we can finally allow ourselves to believe that Spring is truly around the corner. I’m sure that given the mercurial nature of weather this newsletter will land in your inbox amidst a hailstorm. Serves me right for speculatively commenting on the weather. But even if it is sleeting, Spring is within frisbee-throwing distance.
 
And so now we need some recipes to pick and choose from that are transitional in seasonality. I’m going to slap together a list that should have something for any night of the week . . . it’s just which night that’s a bit of a mystery.

Did you think I forgot St. Patrick’s Day? Please. I may not be Irish, but I recognize a good holiday with good food traditions when I see one. Here is what my family will be having some assortment of.
 

Just look at that dish, will ya? My friend David made it last week with kale instead of spinach and pronounced it delicious. Serve it over pasta or another starch of choice and plate it up with Chopped Winter Salad (but not for long, heh heh heh), Spicy Braised Radicchio and Red Cabbage with Citrus, or Best Parmesan Roasted Broccoli.

A simple rub (That you make! Bragging rights!) turns pork chops into a wonderfully flavorful but very easy weeknight dinner. Serve these with Pan Roasted Brussels Sprouts with Chorizo and Toasted Bread Crumbs or Roasted Cabbage Wedges, and maybe Air Fryer Baked Potatoes or Spinach Parsley Pesto Garlic Bread.

An easy combo of stir-fried vegetables provides a gorgeous color medley and crisp-tender texture.
