Cocktail Insights

Egg White in Cocktails: Part 2

Last month, we discussed how to work egg white into cocktails, and how they give many drinks a rich, foamy character that is delightful to drink as we head into the colder months of the year and feel like cozying up to the fire. In addition to that texture, though, egg whites also can change the taste of your cocktail.

Does an Egg in A Cocktail Taste Like An Egg in A Cocktail?

No, it doesn't - especially if you're only using the egg white. If you use a whole egg, like in eggnog, a flip or a Tom & Jerry, you'll detect some definite richness and body that comes from the egg, but even then it won't seem like drinking a raw egg. Surprising as it might seem, egg white does not add any of its own flavor to a cocktail - it definitely does affect how the other flavors in the drink work together, though.

All About the Balance

A well-made cocktail is always a balancing act. The balance between acid and sweet, between strong & sippable, between each of the flavors as they interact in the cocktail. In addition to bringing a smooth, frothy texture to the drink, egg white can bring the ingredients together beautifully, sometimes softening a strong element or bringing the softer, more subtle note forward. This is how egg white works in a Maple Whiskey Sour - without the egg white addition, the whiskey drowns out the soft maple flavor. However, add the egg white and it softens the strong whiskey flavor, while bringing forward the maple for a beautiful balance.

Maple Whiskey Sour

1½ oz Rye Whiskey or Bourbon
¾ oz Lemon Juice
¾ oz Maple Syrup
½ oz Egg White

Shake ingredients in a cocktail shaker without ice, then add ice and shake vigorously for at least 20 seconds. Strain into a rocks glass over ice, & garnish with fresh grated nutmeg.

More Suggestions

If you're looking for some more drinks to try with egg white, you've come to the right place! Another great fall cocktail is our Fall Whiskey Sour - this one uses apple-ginger and chai simple syrups for a fruit-forward, spiced drink. Another great choice is an Absinthe Suissesse, a classic New Orleans breakfast cocktail. There's also the old-school Silver Fizz, or a Winter Sunset with Aquavit. Just make sure you shake ... and shake ... and shake!
Happy Thanksgiving!
We're sending you our very best wishes for a Happy Thanksgiving and for good health in these trying times. We thank you so very much for your support of our little distillery.
