We hope your fall has gotten off to a great start, and you've had time to enjoy some nice weather and fun outdoor activities! Things have been as busy as ever here at the distillery, with scheduling our holiday season, continuing our branding update project and more - read on for the scoop.
 

Our Spirits Are Gluten Free!

Over the years, there has been a lot of confusion about gluten in distilled spirits. Recently, the FDA and TTB updated their guidance, and they acknowledged that distilled spirits like ours do not contain gluten, even when made from a gluten-containing grain like wheat. The reality is that none of the gluten carries over through the distilling process - a fact we have known for years, but weren't able to state definitively, until now.
 

Distillery Updates

First of all, good news: we have some of your favorite spirits back in stock! Doublewood Rum & Scofflaw Old Tom Gin are both back in our distillery store and making their way out to stores. We're still waiting on Tahitian Vanilla Vodka, which should be available by December.

This year has been an interesting one here at the distillery, as it has been for everyone. Usually as the end of the year approaches, we are heading out to tastings around the city and across the Midwest, and filling up our event schedule for the holidays. Most of that is not happening, so we're working on some virtual event options, cocktail catering programs and more. Read on for details!

 

New Curaçao Coming!

Egg White in Cocktails
 

As we head into the colder months of the year, here in the distillery tasting room we've added egg white back onto our cocktail menu. This cocktail ingredient isn't seasonally specific, and you can use it at any time, but there's something about the rich, foamy character it gives to cocktails that makes it perfect to use in the fall and winter months.
 

Who Thought of Putting An Egg in A Cocktail?

Surprising as it might seem, this particular cocktail ingredient is very old school. Using eggs in drinks has been practiced for centuries, dating all the way back to Colonial-era mixtures like eggnog and a style of drink called the flip, which both utilized the whole egg (including the yolk). As cocktails developed in the 19th and 20th century, mixologists began to isolate the whites alone to add a frothy head to now-classics like Sours and Fizzes.
 

Putting In the Work

There are two ways you can add egg-white to your cocktail; either by separating out egg white from an egg from your refrigerator, or by purchasing pasteurized egg whites - they should be available in the refrigerated section of most grocery stores. Then, the key to getting a good froth on your egg-white cocktail is elbow grease and a two-step process. When making an egg-white cocktail, you want to start with a "dry shake" - shake all the ingredients in your shaker before you add ice to the shaker. This first shake, sans ice, allows the drink to emulsify, aerating the finished product and creating that delicious foam atop your drink. After a dry shake, add ice to your shaker and then shake the drink again, vigorously. The longer you shake, the foamier your cocktail will be!
 

This week we're using egg-white in our Drink of the Week:
 

Beauty School Dropout

1½ oz Tahitian Vanilla Vodka
1 oz Raspberry Liqueur (we use Briottet)
1 oz Pineapple Juice
½ oz Fresh Lemon Juice
½ oz Egg White

Shake ingredients in a cocktail shaker without ice, then add ice and shake vigorously for at least 20 seconds. Strain into a chilled cocktail glass.

 

More Suggestions

If you're looking for some more drinks to try your hand at, you've come to the right place! For fall, we love to make a Maple Whiskey Sour - the egg white elevates the maple flavor in the drink. Another great choice is an Absinthe Suissesse, a classic New Orleans breakfast cocktail. We've also made a few Halloween-themed egg-white cocktails over the years! Just make sure you shake ... and shake ... and shake!

Tasting Room Tidbits

Open for Business!


Our tasting room is open for guests indoors, as well as on our outdoor cocktail patio. We are following all the relevant health guidance and have our indoor tables 8-10' apart or more in most cases. If you're in our area, we'd love to have you visit us. We take reservations, and we also offer cocktail kits for making great drinks at home - this month we're offering a Fall Old Fashioned, Bishop's Bounty, Rosemary Pearson, & a Fall G&T kit! We're also finalizing our calendar for the holiday season:
  • Holiday Cocktail Classes (Virtual and In-Person) - we're offering our popular holiday cocktail class again this year, both at Gorton Center on Sunday 11/15 (virtually and in-person) and here at the distillery on Sunday 11/22 (virtually and in-person). We also have one Thursday 11/18 with District 128. Join us and get some ideas for your holiday celebrations! The virtual classes come with optional cocktail kits available for curbside pickup from the distillery, to accompany the class.
     
  • Liquor & Laughs (Virtual) - Saturday, 11/21 @ 7 pm - Join us and Team Us Comedy for an evening of belly laughs and craft cocktails from the comfort of your home! Prepare signature drinks with our expert help with our optional cocktail kit, and watch Chicago-style comedy performed live via Zoom, all from the comfort of your own home. Info & tickets here. Please note - the show, cocktail kit (which must be picked up here), and a soon-to-be-announced dinner option, too will all be ordered separately. 
     
  • Bloody Mary Bash (In-Person and To-Go) - Friday 11/26 from 12-6 pm - Join us for one of our most popular events of the year! This year will be a bit different – reservations will be required, we’ll have fewer tables, and the garnish options will be prepared in advance in our licensed kitchen. Yet, you’ll still find lots of choices and a new housemade mix to try! We will also have a Bloody Mary Kit to go, for pickup on Wednesday or Friday that week. 
     
  • Geek Out Tour - Saturday 11/28 @ 3 pm - Join us for our last "Geek Out" tour of the year! This version of our distillery tour is longer, much more in-depth, and led by our master distiller, Derek. Booked your spot herePlease note: For this tour, tickets must be booked at least 48 hours in advance, and we will hold the tour if at least 4 people have registered. Tours are limited to 8 people total.
In December, we're working on a virtual concert & cocktails event, as well as a few other fun ideas - stay tuned and keep an eye on our calendar!
