Member news 

Celebrating 10 Years with UH Sous Chef Alvin
Sous Chef Alvin Lee and General Manager John Macaulay
Alvin Lee has been surprising and impressing guests at University House, with his outstanding taste, and use of technique, for 10 years. 

Alvin completed the Advanced Diploma of Business (Marketing) and his first year of Bachelor of Business at Monash University, before seeing the light and joining the University House kitchen as a first year apprentice in December 2006 to follow in his father's footsteps and train as a chef. 

Heartfelt thanks for Alvin for making the kitchen an excellent environment to work in, and for treating members to your culinary delights over the years. 
Farewell and Hello
At the end of 2016 we bid farewell from our kitchen team to Sam Woods.  Sam Joined University House as a third year apprentice and has completed his cooking training.  Sam is of for a well-deserved break before starting in the Sofitel Hotel Fine Dining restaurant.  Congratulations Sam.

We welcome Caitlyn Delany to our kitchen brigade – Caitlyn is commencing her cooking journey with us as a first year apprentice.  Welcome Caitlyn.

Wine news 

The Great Wine Dinner of December was delightful (see directly above for wines, and 'Last Month at a Glance' for a shot of the table)! We are excited to bring in 2017 with the first wine dinner of the year with Clive Jones from Nautilus Estate wines, followed by our first masterclass of the year with Pierre Pomerade from Delas wines. Tickets available through the links, and details below.

Nautilus Estate Wine Dinner w/ Clive Jones

Treat yourself to University House’s first wine dinner of the year, with Clive Jones and his Nautilus Estate wines matching an especially prepared menu made by our chefs at University House.

Nautilus is a small, family owned Marlborough, New Zealand winery priding itself on carefully considered, beautifully balanced wines.

Clive Jones works as part of a small team and approaches winemaking in a hands-on fashion. The grapes are picked when they’re at their ripest, and a great deal of thought goes into the process of extraction and production, guided by a long term, careful approach to winemaking.

Delas Masterclass w/ Pierre Pomerade

Join us for University House's first masterclass of the year with Delas wines and Pierre Pomerade.

Delas employs a single vineyard approach by making wines that reflect their own unique terroir, through both their self-grown grapes, and those sourced through like-minded growers. Delas Frères grows 30 hectares of vines comprising 10 hectares in the Hermitage AOC, 2 hectares in Saint-Joseph AOC and 18 hectares in Crozes-Hermitage. 

Delas Frères was founded in 1835. They underwent significant restoration in 1996 which allowed for a continued reputation of high quality wine making, with a focus on enhancing the expression of the terroir.

Sparkling Masterclass: The Art of Fermentation w/ Geoff Scollary

Come along and enjoy a Sparkling Wine Masterclass at University House with Prof. Geoff Scollary. Geoff will be covering methods of fermenting Australian sparkling wines through tank, transfer and traditional methods. The wines will be tasted throughout the Masterclass!

Presented by Dr Geoff Scollary, retired Foundation Professor Of Oenology at Charles Sturt University, Foundation Director of the National Wine and Grape Industry Centre. He is a former convener of the University House Tasting Panel.

Club By-Law

We would like to remind members that visitors eligible for University House membership can be signed in to the Club as a guest a maximum of four times per annum.

Staff Fund

Most members will be aware that towards the end of each year, in lieu of tips, members are encouraged to contribute to our Staff Fund. In fact, contributions can be made throughout the year. Forms are available at front office, Professors' Walk.
