Foxhollow Farm

Foxhollow Farm is our Spotlight Farm this week.  Located in Crestwood, KY, this 1300 acre farm has been owned by the Norton family for 65 years. They affectionately refer to this as building a relationship with the land and the entire family sees themselves as the stewards.  Foxhollow started as a dairy farm and the beautiful home and grounds featured a flock of white doves and many beautiful flower gardens; they still do. In 1972, Mary Norton moved her family to the farm and the current caretaker’s love affair with Foxhollow was tended to blossoming.  As children, the sisters and their brother roamed the forests and woods on the property and drank milk straight from the milking bucket.  Now the property features a farm market, concerts, and a thriving vegetable and grass fed beef farming operation committed to bio-dynamic agriculture which acknowledges the spiritual aspect of all nature, including the farmer. 

Biodynamic agriculture is similar to organic farming in the sense that it is chemical free. No chemical fertilizers or pesticides, no antibiotics or growth hormones are used. The biodynamic techniques go a step further than organic methods by using specially prepared sprays made from organic matter such as herbs, quartz crystal, and compost.

On the website, 3rd generation owner, Janey Newton, who returned to live and farm at Foxhollow with her daughter, Maggie Keith, in 2006, says that farming has changed her and will continue to do so as this profound relationship is a journey for all, including both the land and its people.  Offering grass fed beef, fruits and vegetables, and a CSA, Foxhollow also supplies many local restaurants and Rainbow Blossom Food Stores.  They believe grass fed beef is healthier for the earth, the animals, and for people than grain-fed beef. Foxhollow is committed to using only earth- and animal-friendly farming techniques.

Foxhollow Farm sees sustainability as the act of giving back to the land what has been taken from it, and that is a recurring theme among so many of our participating farms at the St. Matthews Farmers Market.  They use sustainable practices in order to increase the health of all aspects of our environment; the soil, the plants, the animals, the woodlands and streams, and the people!

By example, when they harvest the vegetables that have soaked up the vital minerals and nutrients from the soil, they replenish those nutrients with compost and cover crops that are tilled back into the earth.  When their cattle take nutrients from the land by grazing the pastures, they give back by stimulating stronger re-growth of the grasses with each bite. The cattle act as natural fertilizers of the land as they move throughout the farm.

When they treat the fields with bio-dynamic sprays made from plants, minerals, and compost from the land they are increasing the ability for each plant to grow stronger roots and to take in more nutrients from the water, air, sun and soil.  This cycle of give and take – use and replenish – sustains all.
They offer internships, volunteer opportunities, a community raised program and a partner grower program. The mission of the partner growers program is to provide the opportunity for farmers, gardeners, and artisans to grow biodynamic and organic food in a supportive community. They believe in the importance of sharing their farmland with the next generation of individuals dedicated to growing food that is nourishing and delicious. The exchange of information, resources, and support are a few of the benefits of gathering a group of individual growers on one piece of farmland.

A variety of cooking classes, programs, summer camps, and events enliven the farming community at Foxhollow. Visit to learn about their summer camp programs. In the words of John Muir, "In every walk with nature, one receives far more than he seeks."

Foxhollow hosts a very popular Sunset Concert Series each summer on the second Friday of each month. The next event is June 21 featuring the funky soulful sounds of  Josyln & The Sweet Compression and Lauren Eylise.  Tickets are available at their website at  These family friendly events take place on the farm lawn- set against the verdant backdrop of Foxhollow’s woodlands. They invite top caliber musicians to perform and local food vendors to prepare delicious farm fresh food.  These and many other examples are just a few of the reasons why Foxhollow Farm is such a valued member of our community.

What's at the Market this week?

Welcome back marketgoers! Spring has sprung at the market and the salad making is tremendous. Many farmers have dried apples. Onions, asparagus, strawberries, leafy greens, hot house tomatoes and cucumbers are all available this Saturday. Kentucky Smoked BBQ is offering breakfast sliders with their slow roasted pork, egg, pickle, and delicious sauces. Our musical guest is Double Down and our alternate vendors are Beaded Treasures, Nuts about Cha, Kentucky Made and More, and Hot Off the Lathe. Fresh flowers and flowering plants are available from many farmers including Hambley Farms and Coulter's Good Earth Farm. Hydrangeas and peonies make a beautiful nosegay. West 6th, a farm to brewery from Lexington, Kentucky, is our new beer vendor. The farm is on Shadrick Ferry Road in Frankfort and features free tours, trails, and beer. Learn more here

Featured Recipe
Pimento Cheese Pizza

Our featured recipe this week is Pimento Cheese Pizza which is a terrific hors d'oeuvres. This recipe was submitted by one of our marketgoers. Everything you need to make the dish is available at the market.. Start with a pizza crust from Lexington Pasta Company. Get your pimento cheese from Triple J Farm. Your bacon is available from a variety of vendors. Jackson's Produce has large red peppers. Coulter's Good Earth Farm has herbs.

1 pizza crust
6 oz. pimento cheese
6-8 pieces bacon, crumbled
Sliced roasted red pepper
Fresh parsley

To make:
Fry bacon. Set aside. Crumble when cool. Slice a red pepper and roast in a 350 degree oven, coating lightly with olive oil. Roast until tender. At least 20 minutes. Set aside. Roll out pizza dough. Spread over greased pan. Bake at 350 for about 8 minutes until crisp. Remove crust from oven, flip over, and bake 5 more minutes. Remove from oven. Spread top liberally with pimento cheese. Top with crumbled bacon and roasted red pepper slices. Layer fresh parsley over pizza. Bake 8 minutes or until all toppings are melted. Remove when golden brown. Let stand 5 minutes and then slide with a pizza cutter.

Sherwood Acres Bacon Cheeseburger Bratwurst

Sherwood Acres Beef offers the Bacon Cheeseburger Bratwurst.  This is a beef sausage with uncured bacon, high-temperature cheddar cheese and a pork casing. What is a bratwurst? Let's learn a little about bratwurst. 

A bratwurst is a sausage composed of pork, beef, and/or veal. The name is German, derived from Old High German brätwurst, from brät- which is fine chopped meat and -wurst, sausage. The brat in bratwurst describes the way the sausages are made.  Bratwurst is usually grilled and is sometimes cooked in broth or beer and can also fried or roasted.

Sherwood Acres hopes you will include the Bacon Cheeseburger Bratwurst as part of your Memorial Day weekend cookout and that it will become a regular part of your grilling experience.
