Farm in the Spotlight 
Jackson's Produce in New Location Stall 1

Jackson's Produce is our Spotlight Farm this week. Now located in Stall 1 and 1A, this 40-acre farm North of Borden, IN in Clark County is family owned and produces a variety of fruits and vegetables.  James Jackson, his wife and grandson operate the farm and Mr. Jackson has been farming all his life.  You can find them on the Shelbyville Road side of the Market with a double booth and plenty of fresh fruits and vegetables.

Their fruit orchards are plentiful and feature June apples.  Mr. Jackson says he grows anything somebody might want to eat.  Vegetables include cucumbers, peppers, eggplant, shellie beans, speckle beans, and okra as well as many varieties of summer squash, tomatoes, eggplant, green beans, cabbage, carrots, and much more. 

The Jacksons are very active in the farmers’ market community, and in addition to finding them at Bardstown Road, you can also find them at the Rainbow Blossom Market on Sundays. They are probably most famous in the Louisville area for their tomatoes, which they have been growing for the whole season using greenhouses since 1975. Since that time, better equipment and technology have made their job a lot easier. They now have two 100’x30’ greenhouses for tomatoes, which can grow over a thousand plants. In addition to year-round tomatoes, they have also recently incorporated a lettuce system to provide leafy greens! They do not use fungicides or insecticides, because the greenhouses are climate controlled and pest management is integrated.

When customers thank Mr. Jackson for what he already likes to do, it makes the job worthwhile. Stop by and say hello today in their new location today near the rear parking lot. Mark and Annie Stoll and their Gypsy Ridge Farm will be next door and here to sell asparagus and strawberries as alternate farmers. They are focusing on their wood products, sheds, and barns. .

What's at the Market this Week?

Spring onions, asparagus, strawberries, leafy greens, hot house tomatoes and cucumbers will all be available this Saturday. Fresh bread, jams, cheeses, local honey, pastured meat, and much more. The burrito tent will be back serving up your delicious favorites so linger a little longer and enjoy a hot meal. Kentucky Smoked BBQ will offer a barbeque sandwich with fresh egg. Garey Farms breakfast sandwiches are hot and ready. Stephen Yates, our Market Manager, is ready to greet you. Live music by Gavin Castor. New market makers, Magnolia Woodworking, Broadway Clay, and many more. Our alternate makers are Kandies of Kentucky, Beaded Treasures, Hot Off the Lathe, Nuts About Cha, Blueberries of Daviess County. Gypsy Ridge Farm is an alternate this year. We also said goodbye to Groce Family Farm who are focusing on their wholesale practice.

Edible Louisville will be on hand all morning to greet marketgoers and give out past issues.

Strawberry Caprese Salad

Our featured recipe this week is Strawberry Caprese Salad which is a twist on a beloved favorite while those fresh, sweet berries are in season.   Basil, strawberries, and mini balls of mozzarella (or slivers) dot this delicious salad. Serve over fresh arugula or as an appetizer with toasted French bread baguette slices. Most farmers offer strawberries and arugula and Kenny's Farmhouse Cheese has a mozzarella that can be shredded in this recipe. Sapori d'Italia has great cheeses you could substitute. Primo Oils & Vinegars has your white balsamic vinegar. Wildflour Bakehouse farmhouse white can be used for the bread. Literally everything you need for this dish can be procured at the market.

3 tablespoons white balsamic vinegar
1 small garlic clove, minced
1 tablespoon light brown sugar
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
3 tablespoons olive oil
1/3 cup chopped fresh basil
1 (8-oz.) tub fresh small mozzarella cheese balls
4 cups halved fresh strawberries
Garnish: thinly sliced fresh basil

To make:
Whisk together white balsamic vinegar, minced garlic, brown sugar, salt, and freshly ground pepper in a large bowl until sugar is dissolved. Add olive oil in a slow, steady stream, whisking constantly until smooth. Add 1/3 cup chopped fresh basil and mozzarella cheese balls; toss to coat. Cover and chill 2 hours. Stir in strawberries; let stand at room temperature 30 minutes, stirring occasionally. Serve over fresh arugula or as an appetizer with toasted French bread baguette slices. Garnish with thinly sliced fresh basil.
Makes 4-6 servings.

Bhavana Foods

Bhavana Barde has been a Louisville resident for 14 years and a caterer known for her delicious Indian cuisine for the last seven. But, at the market she brings a new and exciting sideline, Super Food Veda. Bhavana is an adherent to Ayurveda, an ancient Indian practice of food as medicine, Bhavana notes it is the Sanskrit word from ayur meaning life and veda meaning knowledge. It is part of a life style which promotes balance with yoga, meditation and adherence to a diet rich in fruit, vegetables, whole grains and health enhancing spices.

She will be offering ghee which is clarified butter, a super food which promotes longevity of life while aiding digestion and calming the nerves. It is more nutritious than regular butter, especially when the milk from which it is made comes from grass fed cows.

Also for sale will be a favorite rice and lentil dish called, Khichri, which often includes vegetables. It is usually the first food babies eat and is generally considered an Indian comfort food. Each region of India has variations of this staple which is the queen of Indian food and a most nutritious dish eaten almost daily by rural and city dwellers.

A variety of spices and spice blends will round out Bhavana’s wares. A few of the most popular and most medicinal include turmeric, ginger and cumin. Turmeric, which is yellow in color, is found in curry and is widely grown in Indian and Central Asia. It is taken as a supplement which aids inflammation, stomach and gall bladder problems.

Ginger, one of the first spices introduced to Europe was prized by the Greeks and Romans. India is the largest producer of ginger. When dried it becomes a hot fragrant kitchen spice but is frequently used fresh. Ginger can be pickled and eaten as a snack and is an ingredient in gravies and other dishes. It can be boiled and served as a tea. Ginger is widely used as a medicine. In western cultures ginger is used in sweet foods such as ginger ale, gingerbread and ginger snaps. Ginger is a good medicine for nausea, is an anti viral, and antibiotic and an anti-inflammatory. 

Cumin is a popular flavor enhancer in Indian foods and has a list of health benefits. It aids digestion is rich in both iron and vitamins b1,, c and a. Also notable are its healing properties for people suffering from asthma and other breathing difficulties. It is rich in proteins and a good source of magnesium, copper, zinc and potassium.
