Spirits 101

When we started this adventure a couple of years ago, I was about as educated in spirits as the average person. That is, largely untrained.  Now after going through multiple classes, books and long, arduous hours mixing and tasting, and mixing and tasting... I'm here for you.  I've had a number of people ask about a "Spirits 101" class. Sounds like fun to me. I'm planning to set up a 1-2 hour class one evening followed by a tasting at a local adult beverage establishment. Sound like fun to you? Let me know. * These groups are so large, the examples are actually types versus specific brands.

White Lion

Dating from the 1930's, this drink is based on The Lion's Tail from Vintage Spirits and Forgotten Cocktails which calls for Bourbon.  This one will also test your DIY skills since it calls for  Pimento Dram - an odd Allspice Liqueur (or Bitter if you make it per the instructions below). It's difficult to come by in the states, so your challenge is to make it yourself. Be brave. It's worth it.

For the Allspice Bitter, add to a small saucepan:
   100ml Good Jamaican Rum
   5 grams Allspice

Simmer for 15 minutes, turn the fire off and let mull for another half an hour. Strain off the berries and you're done!

Now for the White Lion:
2 oz.     Beat 3 White Whiskey
1/4 oz.  Allspice Bitter (Pimento Dram)
1/2 oz.  Lime juice
1/2 Tbs    Simple Syrup (or to taste)
2 dashes Angostura bitters

Shake all ingredients over ice and strain into a chilled cocktail glass.
