Two Years?!

Whoa! How'd THAT happen? Two years ago we started off thinking if we just built a good still everything would fall into place. Turns out it takes a little more than that. One thing we did get right was a desire to learn and to constantly make better products. Starting with 5-gallon barrels, then 15, next is 30 gallon. (We just got some in - they're beautiful!) Another thing we learned was trust. That is, trust your barrels. Imagine investing lots of resources in your facility and the best ingredients you can find... then sticking the product into burnt barrels... then waiting for a year while... something? ...happens. Well that's what we did one year ago. Remember that myth about Orpheus and Eurydice? All he had to do (after completely mesmerizing Hades with his music, of course), was to walk out of hell, trusting that his wife was with him. Turned out that Orpheus couldn't do it... but we had to trust that the whiskey would follow.  And it did. Bottled at 100 proof, it's got a great intensity. Add a little water and it blooms with aromas and flavors of smoke and spice and malty sweetness.
We are thrilled with our new Single Malt. The release party is today, 21-Nov-15. Free tours. Drawings for distillery schwag. Should be fun. Come on down. Your whiskey is ready.

  • 1 oz Beat 3 Single Malt Whiskey
  • 1 oz Carpano Antica
  • 1 oz Benedictine
  • 3-4 good dashes Peychaud’s Bitters
  • Absinthe Rinse
  • Garnish with Luxardo cherry

This seldom poured beverage is from Famous New Orleans Drinks and How to Mix 'Em). Try it at home or ask your friendly mixologist for one. The sweetness from the vermouth and Benedicine need a strong whiskey to balance them, so it works well with our Single Malt.
Pour the whiskey, vermouth, Benedictine and Peychaud’s into a mixing glass. Add ice and shake vigorously.
Rinse glass with Absinthe and discard.
Strain whiskey mixture into the cocktail glass and garnish.


Distillery News

Single Malt Whiskey release on Saturday, Nov 21, 2015, 12:00PM - 5:00PM. This is the result of small-batch distillations followed by small (15 gallon) barrel aging for one year. The result is good. Quite good. We only put down 4 barrels last year. Not enough to distribute in the NH liquor system, so it's only available right here at the distillery. To celebrate its release, we're opening the doors for free tours and tastings plus random drawings of random cool schwag. Come. Join us.

Singles Night at the distillery Friday, Dec 4 - this is a private event you can sign up for through Trust me, distilleries attract interesting people. Not a bad way to meet a kindred spirit.
