Peaches - The rest of the story...

Almost 2 years ago, we started an experiment using peaches we got from a local farmer. We've come fully around that circle now with our Dry Peach Cordial.  Starting with 1200 pounds of peaches, we pitted (by hand!) and mashed, then fermented, and finally distilled the wine. The peach spirit rested on barrel for 18 months. Now we've bottled it and it is ready for enjoyment.  Although technically not a brandy, it is close in character. It's only available at the distillery, so come try it and tell us what you think of our "little experiment"!

Killin' Thyme
2 oz Djinn Spirits Gin
1 oz Simple Syrup
1/2 oz lime juice
1 sprig thyme
Muddle some thyme in a shaker then shake all with ice. Strain and serve in a martini glass with a thyme sprig garnish.
