Honey Garlic Chicken Thighs

I've been a little lazy lately with my slow cooking so I picked something absurdly simple this week to cook to get back in the swing of things. So tasty for less than ten minutes of prep time.


This is by far the easiest slow cooking recipe I've done yet. It just shows that you can still make something amazing with only a few ingredients.


Ingredients

  • 2.5 pounds of boneless skinless chicken thighs
  • 6 garlic gloves (minced)
  • 1 cup soy sauce
  • 1 cup ketchup
  • 1 cup honey
  • fresh basil (for garnish)
Instructions
  1. Brown the chicken thighs briefly over medium high heat. Just use a little olive oil in a pan and cook each side for 1-2 minutes.
  2. Place the browned chicken thighs in the bottom of the slow cooker.
  3. Whisk the soy sauce, ketchup, honey and garlic in a mixing bowl. Pour over the browned chicken.
  4. Cook the chicken for 6-8 hours on Low. I did mine for just about 7 hours and that worked out perfectly for me.
  5. Serve over rice or whatever you'd like. I also cooked a side of sautéed broccoli with garlic to go with it. Just cook the broccoli until it turns a bright green color over medium heat.
