Indian Spiced Cauliflower and Potatoes

One of my favorite Indian dishes that I love to order whenever I go out for Indian food is cauliflower and potatoes. As I read through my new The Indian Slow Cooker cookbook, I knew I had to make it. It doesn't hurt that it only takes three hours to cook.


I really enjoyed this dish and it was even better the following evening. I definitely recommend this to any vegetarian readers.


Ingredients

  • 1 large cauliflower, washed and cut into 1-inch pieces
  • 1 large potato, peeled and diced
  • 1 medium yellow onion, peeled and chopped
  • 1 medium tomato, diced
  • 1 2-inch piece of ginger, peeled and grated
  • 3 garlic cloves, peeled and chopped
  • 3-4 serrano chilis, stems removed and chopped
  • 1 tablespoon cumin seeds
  • 1 tablespoon red chili powder
  • 1 tablespoon garam masala
  • 1 tablespoon salt
  • 1 teaspoon turmeric powder
  • 3 tablespoon vegetable oil or canola oil
  • 1 tablespoon fresh cilantro (on top for presentation)
Instructions
  • Put all ingredients except the cilantro in the slow cooker.
  • Cook on low for 3 hours. Mix once or twice during cooking.
  • Add cilantro on top when you're serving.
  • Serve over rice or with naan.
