Royal Spoonbill are new immigrants to New Zealand and featured in the first guided walking tour of the Wairau Lagoon for Marlborough history month.

Driftwood supports Marlborough history month with popular tours to the Wairau Lagoon.

We offered two tours for Marlborough History month, the vehicle tour to Vernon Station with views over Cloudy Bay from Jamie's Knob and a walk on the beach at the foot of the towering White Bluffs was a sell out. The second tour was a guided walk to the Wairau Lagoons starting at our property at the end of Dillon's Point Road. On both tours Will shared his knowledge and passion for the human and natural history of the area. (Please note that the cost of this tour is reduced to $20 per person for scheduled tours for history month only).

Will does most of the baking for the tours, this one is his most popular and he has been asked for the recipe many times.
200gm butter
3 apples chopped
1 cup raw sugar
1/2 cup honey (optional)
2 eggs beaten
2 1/2 cups wholemeal flour
1 tsp baking powder
2 tsp baking soda
3 tsp cinnamon
1/2 tsp allspice (optional)
1 cup of sultanas or raisins
1/4 cup of sliced crystallized ginger
1/2 cup chopped walnuts

Preheat oven to 150 degrees Celsius. Grease and line a 26cm baking tin.
Melt butter in a large pot. Remove from the heat and add sugar, honey and eggs. Add all other ingredients and mix to combine. Bake for around one hour.
