Here are some veggie desserts sure to please, with the added bonus of nutrition. You willing to give it a shot? Say yes!

Sweet Potato Cupcakes
We all know from Thanksgiving that sweet potatoes find a nice home on the dinner AND dessert tables. Here's further proof! Sweet potato cupcakes use a puree, so make one easily by peeling, cutting into chunks and boiling until tender (15 minutes ish). Cool with cold water and toss in the food processor until smooth. 

Easy Carrot Cake
Beat the cookie exchange at work with cake (or cupcakes!) when you just can't do gingerbread anymore. This carrot cake uses applesauce instead of eggs making it a vegan alternative. Another great instead-of-cookies option: these blueberry crumb bars. Use the frozen blueberries and make your life easier.
