SMALL IS BEAUTIFUL: Sustainable small farms focus on soil, plant and animal health. They grow produce that supports these principals rather than glittering grocery store shelves. They grow produce that thrives in their soils and climate, which reduces the necessity for chemical pesticides and fertilizers. They grow produce that is nutrient-rich, which means less is more for health. They are adaptable, they care, they work hard and fight the good fight for us every day.

BEETS INSTEAD OF BURGERS: Oxford University posits that transitioning to a more plant-based diet could reduce food-related greenhouse gas emissions by 29% - 70%, which are reported to cause about 25% of all greenhouse gases.

Bok Choy can be eaten raw, roasted, boiled, steamed, stir-fried, microwaved, or deep-fried. The entire head can be eaten. To prepare, separate the leaves from the stalks, then rinse well and drain. Shred or cut across the leaves and cut the stalks into small slices along the diagonal. Great with a bit of garlic, ginger or soy sauce. Remember—you can eat the stalks raw, too!

Pea Greens

Pea greens (or pea shoots) are young pea vines. These nutritional powerhouses are packed with vitamins A, C, and folic acid. Sauté quickly with olive oil and garlic for a healthy side dish, or put out on the table raw for a snack. To entice the little ones, try tossing with a little melted butter and sugar. Pea shoots also make wonderful pesto; all it takes is 10 minutes, 7 easy ingredients, and a plate of pasta for an amazing meal.
