Theme: Just Peachy
YELLOW CLING PEACHES!  Clingstone peaches have flesh that clings to their pits. They are softer, sweeter, and juicier than freestone peaches and hence sought after for canning and preserving (commercially canned peaches are all clingstones). Most grocery stores only carry freestones.  Here's SIXTY-ONE Peach Recipes from Southern Living to try your hand at.

Heirloom Tomatoes Warning: Heirlooms can be incredibly beautiful or incredibly ugly. Anyone that has been to an estate sale can verify this. Treat with care. These are fragile, which is why you don't often see them in grocery stores. Berlin's Best Farm (IPM)
Parsley There are more than 30 varieties of parsley, but the most common are curly-leaf and the more pungent Italian or flat-leaf parsley.

Don't underestimate the presence of parsley on your plate as food not just  garnish...believe it or not other cultures make meals out of parsley ...see recipes below.

The flat-leaf has more flavor than curly parsley and is preferred for cooking, while dried parsley has little flavor at all. In ancient times parsley wreaths were used to ward off drunkenness. Chewing parsley will help with bad breath from food odors such as garlic. HepworthFarm (CO)
Garlic Scapes Garlic scapes are the immature flower stalks of garlic. Scapes are only available for a few weeks out of the year so we get them while we can. Use them as you would use garlic or scallions. They can be eaten cooked or raw. You can also freeze garlic scapes. Sky Meadow Farm (CO)
Red Potatoes (dirty) These are good roasted or mashed. Redskins are delicate and thus cook more quickly than other types of potatoes. On the table in no time. Ths time of year the skin is so delicate that we asked Shauls not to wash the potatoes.

Yellow Cling Peaches A summer delight. Luscious, juicy peaches are great for fresh eating, of course, but they also make a fantastic dessert when thrown on the grill and served warm with whipped cream—delicious! Yonder Farms (FAM)
Arugula Also commonly referred to as "rocket", arugula has a rich, peppery taste. Raw or wilted arugula tastes fantastic on pizza. Makes for a delicious pesto, especially if you mix with basil and/or parsley. Farm at Miller's Crossing (IPM)
Slicing Cucumbers Slice cucumbers thinly and toss with vinegar, olive oil, shallots and salt & pepper for a beautiful, cool summer dish. Add in chives, dill or parsley. Hepworth Farm (CO)

6 Ways to Prepare Redskin Potatoes
Oven-Roasted Herbed Redskin Potatoes—slip chopped shallots in the roasting pan and sprinkle with snipped chives right before serving.
Peach Cobbler

  • Tip: Any item you would cook, you can also freeze.
  • Pasta people! Keep it in the fridge 4-5 days or freeze it.
  • Peaches: a day or two to ripen in the pantry, then into the fridge for MAX 5 days. Eat 'em up.
  • Refrigerating tomatoes ruins their texture.
  • Any green needs to be as dry as possible, wrapped in a paper towel in a plastic bag and kept in the fridge crisper.

  • OG - Organically Grown (farm uses organic methods but does not have Certification).
  • IPM - Integrated Pest Management (methods used to reduce the use of pesticides and chemical fertilizers)
  • FAM - Family farm (farm often uses organic and IPM methods but may also use chemical fertilizers and pesticides. As a general rule small farms use far fewer chemicals than large industrialized operations).
