Theme: Napa: It’s not what you think
Did you know that the five-day forecast for the Capital District and Westchester is almost exactly the same as Napa, California?  Of course you didn’t.  Why would you?  We, on the other hand, we were inspired to explore things Napa by our featured item this week, the noble napa cabbage. We know now that the napa cabbage has absolutely nothing to do with Napa, California.  Napa cabbage, more commonly known as Chinese Cabbage, originates from the Beijing area of China, where the five-day forecast is actually what one would expect to see in New York in December.  The name for napa cabbage comes from the Japanese word “nappa” which means vegetables greens or leaves.  Imagine living in a culture where they have a specific word for vegetable leaves.  You may, however, be disappointed to learn that Napa, California is not named after vegetable leaves but rather a Native American village.
We have a new farm this week: Stick and Stone Farm.  The 40-acre Certified Organic farm is owned by Lucy Garrison and Chaw Chang and is located in the Town of Ulysses, out by Ithaca.  They reminded us that “studies have shown that Napa is one of the most nutritious vegetables and it is very versatile, as it can be eaten fresh, cooked or pickled.”  They had a bumper crop and needed a home for these babies.  We said bring them on!

Napa Cabbage There is nothing better than roasted Napa Cabbage. Drizzle a mixture of soy sauce and oil over cabbage sliced into thin discs, sprinkle with red pepper, and bake for 10-15 minutes at 350 degrees. Keep cooking until discs become crunchy. Pea Shoots Pea greens are young pea vines. Delicious raw or cooked—saute quickly with olive oil and garlic for a delicious healthy side dish, or put them in a bowl on the table and watch your kids nibble them like bunnies. To further entice the little ones, try tossing with a little melted butter and sugar. These nutritional powerhouses are packed with vitamins A, C and folic acid— learn more here. Bosc Pears With its long-curved stem and elegant, elongated neck, Bosc pears are often called the “aristocrat of pears". Bosc pears have a more firm, dense flesh than other pear varieties, making them ideal for baking, broiling or poaching. Yonder Farms (FAM)

Kale Easy to cook and incredibly healthy. For a quick dish, cook kale for a minute in a pot of boiling water. Drain, squeeze out excess water, and sauté with olive oil and garlic for just a couple minutes. Remember to try kale chips if you haven't yet. Just strip the leaves off the stems, place in a plastic bag with a little oil and soy sauce mixture (by little we mean enough to lightly coat—worst thing you can do is add too much), shake the bag, and place in the oven at 280 degrees for 10-15 minutes. Fledging Crow Vegetables (OG)

Sweet Potato Burritos –Here's a new thing to do with your sweet potatoes.
