a guide to the maillard reactionIn researching roasting, it was revealed that a reaction known as Maillard is at the root. Maillard is a chemical reaction that gives roasted food its flavor. When food is roasted, hundreds of different flavor compounds are created. And in turn, each food has its own distinctive set of flavor compounds. As you can see in this chart (click to see full size), this is flavor fusion at play!

The kipfel (also known as Austrian Crescent Potatoes) is a type of fingerling. Keeping to its German roots, these potatoes can get big, so if you're looking at something that more closely resembles a baby’s foot than a finger, odds are you have a kipfel in your hand.

Here is a cheat sheet for roasting vegetables:
  1. Make the size consistent
  2. Add enough oil to make them shiny
  3. Use a pan not a dish
  4. Leave space between the vegetables
  5. Roast at 400 degrees +
  6. Cook for about 30 minutes
  7. Turn at least once

Cauliflower has an exceptional nutritional density, which means it contains substantial amounts of vitamins and minerals with very few calories. Mark Twain calls cauliflower "cabbage with a college education." For a quick fix, sauté cauliflower florets and sliced garlic in olive oil until browned and tender. To boost the flavor, toss with raisins, pine nuts, crushed red pepper, and salt.

Caramelize onions in 10 minutes: Place chopped onions in a dry pan without salt and cook over medium-high heat until dark brown and softened, about five minutes. Add oil and a pinch of salt, then cook for five more minutes until completely soft. Throw on top of bread for a snack, or use as a garnish to just about any meat or fish. Add to pasta, soup, or pizza.

According to the New York Times, garlic has been known for its therapeutic benefits since ancient times. Studies have linked it to lower cholesterol, serum triglyceride, and blood pressure levels. Sulfur-containing compounds including allicin give garlic its pungency, along with high levels of vitamin C, vitamin B6, manganese and selenium, which seem to be responsible for garlic’s beneficial cardiovascular effects. Allicin is a powerful antibacterial and antiviral agent. You can freeze whole bulbs of garlic and individual cloves, which ends up making the cloves much easier to peel. One of our favorites is roasted garlic, which subdues its intensity to soften and bring out its sweetness!
