We're super excited to have beets in the bag this week. Literature fans out there may know that the beet is the most intense of vegetables, and they serve us well as BEET BURGERS. Seriously folks, you have to try this one. It's a new season, and this autumn we're gonna try something new. This recipe is our absolute favorite, and it doesn't include any crazy stuff: raisins, walnuts, lentils, rice, shredded beets, an onion, garlic and an egg. We know you've got paprika in the pantry, so try this one out! Let us know how it goes on Facebook! We love to see photos of the great stuff you make.

Canola Oil (8oz small/standard or 16oz family) Don't get this canola confused with the stuff in plastic bottles at the supermarket. This is cold, expeller pressed oil without any of the processing chemicals that you're used to. You'll love this oil for its light flavor in sautéing and salad dressings. Full Sun Company (non-GMO)

DIJON VINAIGRETTE 
1 tbs. Dijon Mustard
2 cloves of Garlic (minced)
1/2 clove Shallot (minced)
1 cup Full Sun® Sunflower Oil
Apple Cider Vinegar to taste (about 1/2 cup total)
1/2 tsp. Maple Syrup 
Pinch of Salt
Mix mustard, garlic, shallot, vinegar, maple syrup & salt, then gradually add oils while whisking (or blending)
Spaghetti Squash When cooked, the flesh of spaghetti squash falls away into ribbons or strands, which makes a great a great substitute for pasta. The flesh can also be baked, boiled, steamed or microwaved, and the seeds can be roasted and eaten like pumpkin seeds. Barber Farm (OG) or Rexcroft Farm (IPM)

Red Beets Did you know that a cup of raw beets has only 58 calories? Beets are in the same family as chard and spinach. If you have a mandolin slicer, julienne the beets and toss with oil and lemon—beautiful and tasty. This page has a nice summary of how to microwave, roast, sauté, and steam beets. Notice boiling was not mentioned—do not boil! Boiling sacrifices the quality and flavor of the beet and releases an unpleasant aroma. Whistledown Farm (OG)

Cherry Tomatoes STANDARD & FAMILY ONLY This small variety of tomato has been cultivated since the early 19th century. Try roasting them whole (some will pop and splatter) until caramelized, then put on top of a cracker, puff pastry, bread. whatever! Barber Farm (OG)
