  THEME    A Small Sweet Potato and The Meaning of Life

mini sweet potatoesWhen you farm in Essex County, NY (population 39,000) you need to be scrappy. Essex County is located about an hour or so south of the Canadian Border. Adam Hainer, owner of Juniper Hill Farm, believes that every potato is sacred, every potato is great, if a potato is wasted, God gets quite irate. For Adam, this is the meaning of life.
 
This brings us to the birth of the fingerling sweet potato. Technically a “fingerling potato” is a variety that naturally grows small and is fully mature when harvested. As such, there is no such thing as a “fingerling” sweet potato in our galaxy. There are, however, plenty of delicious “scraggily” sweet potatoes….a name only a farmer could love.
 
About a whopping 30% of commercial sweet potato crops are lost to culling, which for the most part means that they are too big or too small for sale to the grocery market. These are then often used for stock feed or canning.

What to do? How about sell them to people! For those of you who are newbies to Adam’s fingerling sweet potatoes you're about to enter a new food dimension, which is tasty and helps save the world.

Jonagolds are a very popular variety with great flavor. It inherits many of the good qualities of its parents Jonathan and Golden Delicious. It's juicy and aromatic and has a sweet-tart taste.

Easy to cook and incredibly healthy. For a quick dish, cook kale for a minute in a pot of boiling water. Drain, squeeze out excess water, and sauté with olive oil and garlic for just a couple minutes. Remember to try kale chips if you haven't yet!

Spinach is best when eaten raw or lightly braised. To braise, toss with hot oil and garlic for a few minutes and then add splash of liquid. We like to add Parmesan cheese. If you choose to steam the spinach, wash and steam for just 5-10 minutes. This preparation method preserves nutrient content.

A member of the lily family with a mild, slightly sweet onion taste. Think giant scallion. Our guilty pleasure is leeks baked in cream—trim the leeks and slice the white parts in half lengthwise, then rinse and arrange on a baking dish, cut side up. Mix 2 cups of heavy cream with a pinch of Dijon mustard and pepper, then pour over the leeks. Sprinkle breadcrumbs on top and bake 30-45 minutes or until leeks are tender and the top golden.
