Theme: All hail Cornmeal Queen!

This week you'll receive a bag of royalty-quality, organic, non-GMO cornmeal produced by Farmer Ground Flour,  a small co-operatively owned business located outside Ithaca, NY. Cornmeal is not just for your pantry, it's surprisingly versatile and a staple in many cultures.

How about making some? Swedish Knackerbrod med Fron (we have no idea how to pronounce that) -- a cracker-like Swedish bread made with cornmeal, sesame seeds, and sunflower seeds. Adding it to soup as a thickener -- who knew? -- as is done in Brazilian Sopa de Fuba, a soup made of collard greens (or substitute kale), cornmeal, and sausage.

For a truly ye olde time New England dish that is wicked easy, make Indian Pudding, a cornmeal-thickened sugar pudding popular with the 17th century settlers.

Pair Warm Apple-Cornmeal Upside Down Cake with ice cream for an unparalleled sweet treat! "This recipe is my all time favorite recipe. The only problem I've ever had is keeping it for more than 24 hours because it gets eaten so fast. I love this cake."

Corn played an important mythological role in many tribes in North America. In some cultures, corn was a respected deity, while in others, corn was a special gift to the people from the creator. Corn was also used ceremonially in many tribes, with sacred corn pollen or cornmeal used as ritual adornment and spiritual offerings. Makes you rethink your relationship with cornmeal!

Caramelize onions in 10 minutes. Easy! Place chopped onions in a dry pan without salt and cook over medium-high heat until dark brown and softened, about five minutes. Add oil and a pinch of salt, then cook for five more minutes until completely soft. Throw on top of bread for a snack, or use as a garnish to just about any meat or fish. Add to pasta, soup, or pizza.
