Theme: How we saved the cherry tomatoes

Late last summer we got a call from Hepworth Farm. One of their large retail customers (who shall not be named) decided they did not need the truck load of cherry tomatoes Hepworth had harvested for them. Could we buy them?  Even for us that is a heck of a lot of cherry tomatoes. So we came up with an idea...why not freeze them? We did and woo-hoo that is what you are getting this week.

Frozen Cherry Tomatoes Thaw in the fridge for a few hours, then fold into a pasta or toss with a little olive oil and salt & roast (at around 350 degrees). Hepworth Farm (CO)

Frozen Blueberries Like summer in winter. If you eat them frozen it is like mini sherbet bites. Otherwise thaw, then drain liquid and add to yogurt, pudding, muffin, or pancake mix, whatever.  Lagoner Farm (OG)

Cabbage, Kale, and Salad Mix Hooray for Crooked Carrot Farm in Ithaca, NY. They had a boatload of napa cabbage and came up with this fantastic idea: a winter cabbage, kale, carrot, radish salad mix. So this is your opportunity to make a killer winter salad. Add shredded parmesan, crunchy nuts, and a dijon-based dressing with balsamic, olive oil, and garlic or a standard mayo based dressing. Toss in your turnips and pea shoots. If you've got any apples lying around, slice 'em and mix 'em in, too. Crooked Carrot Farm (OG)

Purple Top Turnips Totally underrated root vegetables. Raw turnips are a very good source of dietary fiber, Vitamin C, and Manganese. You will need to peel. Try roasting. Cut turnips into wedges. Toss with fresh ginger, canola oil, salt and pepper. Drizzle with honey and roast at 400° F until tender. Rexcroft Farm (IPM)
