Summer is the easiest time to eat your colors! Mother Nature has made what we should eat super obvious (thanks, M.N.) A variety of colors means a variety of nutrients. For example: orange and yellow colored skin means those fruits & veggies are packed with nutrients such as vitamin C, beta-carotene, vitamin A, potassium, and lycopene. Fill your plate up like an artist's palette.

Shiitake Mushrooms If you eat miso soup, you should be familiar with Shitake mushrooms. Most people don't eat the stems of these, so we suggest using them for stock instead. Bulich Mushroom Farm (OG)

Shiitake and Green Bean Stir-fry 
Garlic Sautéed Shiitake Mushrooms –10 minutes/4 ingredients, doesn't get much easier than that. 
Shiro Plums A juicy, medium size greenish-yellow plum with a mildly sweet flavor. Plums are high in antioxidants, and vitamins A, B1, B2 and C. Try honey-roasting them with honey, brow sugar, and butter. Klein's Kill Fruit Farm (FAM) 
Storage: A day or two in pantry until ripe, 3-5 days in the fridge once ripe.

Sweet Corn We love fresh summer corn right off the grill or tossed in a salad. For a super easy, fresh summer salad, toss with diced cucumbers and tomatoes, then drizzle with olive oil and lemon juice. Add red onion or garlic and an herb like basil or mint. Migliorelli Farm (IPM)
Storage: Keep in the fridge up to 3 days.

Shiro Plum & White Corn Salsa
Ingredients:
One ear of corn, preferably white
Zest and juice of 1 large lime
1 lb Shiro plums, rinsed, halved, pitted and diced
1/2 red onion, diced to 1/-4 inch
1 shishito pepper
1 jalapeno pepper, minced, without seeds 
1 tsp lemon juice
1 tsp salt
1 tsp ground cumin
1/8 tsp ground cayenne pepper
1/4 cup chopped fresh cilantro
Directions:
1.    Husk the corn, steam or boil the corn in water on the stove top, or if it’s fresh enough, use it raw.
2.    Combine lime zest, juice and plums in a medium bowl, tossing to coat plums (and prevent browning). Add onion, peppers, salt, cumin and cayenne pepper. Cut corn kernels off the cob and add to the salsa. Taste and adjust seasonings, add a splash of lemon juice. For best taste, allow to blend and mellow at room temperature for an hour or so, or refrigerated overnight.
3.    Add fresh cilantro, toss and serve.
Yields about 3 cups.
Mixed Cherry Tomatoes This small variety of tomato has been cultivated since the early 19th century. Try roasting them whole (some will pop and splatter) until caramelized, then put on top of a cracker, puff pastry, bread, whatever. Hepworth Farms (CO)
Storage: 1-5 in pantry days until ripe, 2-3 days once ripe. You can refrigerate but it may affect flavor/texture.

Salad Mix Put fresh salads on your table as often as you can. For a more filling and flavorful boost add roasted nuts, died cranberries, roasted sunflower seeds, shaved parmesan, or chick peas. Markristo Farm (CO) or Continental Organics (Aquaponics)
Storage: Up to a week in the crisper, wrap lettuce in a paper towel within the plastic bag to keep dry. 
Easy Salad Dressings (to know by heart)
Red Beets Did you know that a cup of raw beets has only 58 calories? Beets are in the same family as chard and spinach. If you have a mandolin slicer, julienne the beets and toss with oil and lemon—beautiful and tasty. This web page has a nice summary of how to microwave, roast, sauté, and steam beets. Notice boiling was not mentioned—do not boil! Yellow Squash We like our summer squash soft and sweet. Melt butter in a pan, then add onions and cook until soft, about 4-5 minutes. Add squash, salt, pepper, and brown sugar. Stir, then cover and cook for about 20 minutes, until squash is very soft. Remove the cover to let the excess liquid cook off. Running Creek Farm (OG)

Flat Leaf Parsley is seemingly the most popular herb to cook with (hands down in Mediterranean cuisine). It derives its name from the Greek word meaning "rock celery" because they are plant cousins (probably not an actual horticultural term). Letterbox Farm Collective (OG)

Sprinkle fresh chopped parsley on basically anything, especially with lemon & garlic on chicken or fish.
