Seldom seen in American grocery stores, squash blossoms make a generous appearance in many countries, especially Italy, where they are often stuffed and deep-fried. In Mexico, squash blossoms are called flores de calabaza and can be found in everything from soups to quesadillas! To prepare, gently rinse, open the petals, shake out the pollen, and remove the pistil. These babies are easy to stuff--think cheese, mushrooms, and peppers. Zucchini blossoms can also be eaten raw and thrown in salads for a beautiful, healthy garnish. Still not sure where to start? Caramelize onions in 10 minutes: Place chopped onions in a dry pan without salt and cook over medium-high heat until dark brown and softened, about five minutes. Add oil and a pinch of salt, then cook for five more minutes until completely soft. Throw on top of bread for a snack, or use as a garnish to just about any meat or fish. Add to pasta, soup, or pizza.

There is nothing better than roasted Napa Cabbage. Drizzle a mixture of soy sauce and oil over cabbage sliced into thin discs, sprinkle with red pepper, and bake for 10-15 minutes at 350 degrees. Keep cooking until discs become crunchy. Anything you can do with regular cabbage you can do with Napa!

Bok Choy can be eaten raw, roasted, boiled, steamed, stir-fried, microwaved, or deep-fried. The entire head can be eaten. To prepare, separate the leaves from the stalks, then rinse well and drain. Shred or cut across the leaves and cut the stalks into small slices along the diagonal. Great with a bit of garlic, ginger or soy sauce. Remember—you can eat the stalks raw, too!
