It's been another busy month with new customers discovering our shop much to their delight.
A feature in our shop this month are the new 250g glass jars which make ideal gifts for the holiday season.

John’s Beekeeping Diary for November/December – “Supering Up”

 

Our ‘4 star’ hive in Westmere with 4 supers full of honey and ready to harvest; March 2016.
Ask any beekeeper what he is doing now and the emphatic reply will be “supering up”. His truck is loaded up with empty boxes, “supers” in beekeeping language, and he is out on a daytime mission to his hives. He adds these to his hives as a top up to catch the crop.

These warm, moist days and lack of strong winds have heralded the start of the honey season. There is so much clover around now, and it’s a few weeks earlier than usual. At last there is plenty of natural food for the bees and they virtually look after themselves.

In many ways our daily task as beekeepers is very straight-forward. Just add a box to the hive when extra room is needed. At peak time in early January the bees can fill a super in 7-10 days. That is up to 20kgs of honey from 1 hive. I am hoping that our hives will produce more than 1 box of honey this year. Maybe two or even three before the season closes end of January!

I guess I’ll have to spend time in my workshop preparing more and more boxes and frames...

It’s early days now but it’s a great start to the honey season.

Janice’s Recipe – Frozen Banana and Carob Nibbles


Delicious school holiday treat for the family.


Step 1: Prepare the bananas

  • Select 2-3 very ripe bananas, peel and cut into 1cm rings.
  • Carefully poke a toothpick into the centre of each ring.
  • Line a plate with baking paper and place the banana rings on it.
  • Freeze the rings (at least 24 hours).

Step 2: Prepare the Carob Sauce


Ingredients
  • 2/3 cup carob or cocoa powder
  • 1/3 cup honey 
  • Vanilla or a few drops of strawberry essence
  • 1 cup cream
Method
  • Place all ingredients in the top half of a double boiler.
  • Cook gently, stirring occasionally until sauce is smooth and creamy.
  • Allow to cool (the sauce still needs to be runny enough for dipping).
  • Remove the banana rings from the freezer. Hold onto the toothpick and gently dip each banana ring into the carob sauce and then into shredded coconut.
  • Place each ring back onto the plate lined with baking paper and re-freeze for an hour or so.
  • N.B. Whole strawberries are delicious when dipped into this sauce.
  • Left over carob sauce can be stored in a covered container in the fridge and gently warmed to be used as a topping over frozen banana ice-cream.

We will continue to have Native Bush (without a Manuka component) already packed and on the shelf, and also available when you bring your own container.
